  • 1/4 cup rasberries additional for garnish
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 oz Eau Claire Distillery cherry gin
  • 1 bottle prosecco or champagne
  • Dried rose petals for garnish


  1. RASPBERRY SYRUP - In a saucepan, mix the raspberries, water and sugar and bring to a boil.  Once it is boiling bring down to a shimmer for about 10 - 15 minutes. Strain the raspberries and let the syrup cool. I kept some of the original syrup and added to the bottom to create a bit of texture to the drink.

  2. COCKTAIL - In your glass add at the bottom 1-2 tablespoon of your raspberry syrup. Then add an ounce of the cherry gin and finish topping it up with the prosecco. 

  3. GARNISH - Add fresh raspberries and dried rose petals for garnishing.
