This avocado on toast with pink hummus is a trendy brunch dish that's super easy to make at home! It is super nutritious and almost to pretty to eat!

  • 1 whole avocado
  • 1 medium cooked beet
  • 2 cups chickpeas
  • 2 cloves garlic
  • 1 whole lime juice
  • 3 tbsp tahini
  • 3 tbsp olive oil
  • salt and pepper to taste
  • bread as desired
  • sesame seeds for garnish
  • any leafy green (chopped) for garnish


  1. Start by blending together the chickpeas, beets (if using previously cooked and frozen beets make sure they are thawed out), garlic, lime juice, tahini and olive oil until it's all smooth.

  2. Taste and add salt and pepper to taste and blend once more.

  3. Toast your bread as desired. Gluten free options can be used as well. 

  4. Pit your avocado and mush it all together in a separate bowl and add salt to desired taste. 

  5. To assemble, add the pink hummus to your bread, then add the avocado on top and garnish with sesame seeds and cut up leafy greens.
