Ingredients

  • 1 cup dry black beans
  • 3 cups vegan vegetable broth
  • 1 minced small onion
  • 2 cloves garlic
  • 2 tsp mexican oregano
  • 1 tsp cumin
  • 2 tsp salt - to taste
  • 2 tsp pepper - to taste
  • 1-2 minced chillies - to taste

Instructions

  1. Add the washed beans, broth and all herbs into the instant pot. Once the lid is secure press the bean setting and cook the beans for 45 minutes. Allow the pressure to release naturally.

  2. Once the beans are done (including the natural release) open the lid and set to saute setting to simmer off some of the excess broth. While the beans are simmering, take a potato masher or hand blender and blend the beans.

  3. Make sure the beans are not too dry as you want moisture in them in case you want to reheat them or freeze them.

  4. After the beans are all smashed, taste and season to taste.
